Pumpkin & Roasted onion Ravioli WITH RADICCHIO AND POMEGRANATE
INGREDIENTS
1pack Rana Four Cheese Ravioli
75gshredded radicchio
15gpomegranate seeds
6tbsp extra virgin olive oil
0.75tbsp honey
2tbsp white wine vinegar
salt and pepper to taste
METHOD
Heat the oil in a large frying pan, add the radicchio and sauté for 1 minute. Season with salt and pepper to taste, add honey and vinegar and cook for another 2-3 minutes.
In the meantime, cook the ravioli according to package instructions and drain, then transfer to the pan and stir gently. Garnish with pomegranate seeds and serve.
